Sugar Free Blueberry Jam

This sugar free blueberry jam is easy to prepare, delicious and versatile.

  • 1 small saucepan

Ingredients
  

  • 1 pint blueberries fresh or frozen
  • 1/2 lemon, juiced
  • 1 cup water
  • 2 tbsp chia seeds
  • 1 tbsp monkfruit sweetener

Instructions
 

  • Add blueberries and water to saucepan over medium heat. Bring mixture to a boil and let simmer for ten minutes.
  • Remove from heat. Add lemon juice, chia seeds and monkfruit sweetener. Whisk to combine.
  • Once cooled, transfer mixture to airtight containers. Store in the refrigerator for up to two weeks.

Notes

Your jam may look a little bit runny before being transferred to the refrigerator. Over time, the chia seeds will thicken it up!
