- Add blueberries and water to saucepan over medium heat. Bring mixture to a boil and let simmer for ten minutes.
- Remove from heat. Add lemon juice, chia seeds and monkfruit sweetener. Whisk to combine.
- Once cooled, transfer mixture to airtight containers. Store in the refrigerator for up to two weeks.
Notes
Your jam may look a little bit runny before being transferred to the refrigerator. Over time, the chia seeds will thicken it up!
