Maybe itβs the air but ever since Iβve moved to Texas, I can NOT stop eating fajitas. If Iβm not craving Asian food (which is a given because Iβm Asian), I am craving Tex-Mex.
After some trial and error, I finally got the marinade for my steak fajitas to be just right!
This Steak Fajita Marinade is made with olive oil, soy sauce, orange juice, lime, garlic, herbs and spices. It is the PERFECT combination of flavors that will make your mouth water and leave you and your family wanting more.
What type of steak should I get to make steak fajitas?
For steak fajitas, I would recommend either skirt steak or flank steak. I like to use skirt steak because it has more fat than flank steak. But, grocery stores will more often have flank steak available.
After testing this marinade with both cuts, I find that the difference in taste between skirt steak and flank steak is pretty negligible, especially because youβre eating the steak with a bunch of other things (sour cream, tortillas, guacamole).
How long does it take to marinate steak fajitas?
For best results, I would aim to marinate the steak fajitas anywhere from two to 24 hours. Anything longer than that will compromise the texture of the meat. The acidity in the orange juice and lime starts to break down the meat, leading to a mushy consistency.
If you are in a real time crunch, you could marinate the meat for half an hour. Just be aware that it may not be as flavorful.
What do I serve with steak fajitas?
I enjoy serving steak fajitas with veggies such as peppers, onions, tomatoes, lettuce and grilled jalapenos.
For carbs, I like rice, corn, or warm tortillas. Sometimes I make all three if I really want to go all out.
I like to have sour cream, guacamole, cheese, and lime wedges on the table so that everyone can customize their steak fajitas to their liking.
Can I make steak fajitas ahead of time?
Yes, you can make steak fajitas ahead of time. This marinade freezes well, so you can prep it and store it in the freezer for up to three months.
When you are ready to use the meat, defrost it and use it within 24 hours.
How long can I store leftovers for?
You can store leftovers in an airtight container for 2-3 days.
What tools do I need to make steak fajitas?
Here are some tools that I find useful to have in my kitchen for making steak fajitas and other recipes:
- Meat thermometer: This is a MUST HAVE tool to make sure all of your meat is cooked to temp.
- Quality knives: Your knives can actually impact the taste of your food! For steak, you want to have a nice, sharp knife to work with.
- Non-slip cutting boards: When you’re cutting your steak with your nice sharp knife, you want to be safe and make sure your cutting board isn’t slipping all over your counter.
Steak Fajita Marinade
Ingredients
- 2 lbs skirt or flank steak
- 1/2 cup orange juice
- 1 lime juiced
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 3 cloves garlic minced, or use 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp oregano
- salt to taste
- black pepper to taste
Instructions
- In a large resealable plastic bag or mixing bowl, add all the ingredients (except the steak). Whisk to combine.
- Add the steak to the marinade. Toss, making sure each side of the steak is coated in marinade.
- Seal the bag or cover and marinate in the fridge anywhere from 2-24 hours. Make sure to flip the steak halfway through your marinating time.
- Remove the meat from the marinade and transfer to a large, clean surface. Pat the steak with paper towels.
- Season both sides of your steak with salt and pepper and let the steak sit out for about 30 minutes before grilling to your desired doneness.
