After a little hiatus due to COVID (don’t worry, it was just a mild cold for my family and I) and a HORRIBLE experience with Bluehost customer service, we are back with another easy and delicious recipe!
This recipe was created by my brother, Corey. Like me, he is also very into health and fitness, so I love to bounce ideas off of him when I am in a creative rut.
In college, he had both a meal plan and a kitchen for when his dining hall was closed. With all those gym sessions and gains, it was necessary to have access to food at all times!
Corey loves recipes that are quick to whip up with simple and clean ingredients. This is great for me because that is exactly what I’m going for!
This chicken bowl is so yummy and easy to make. It will definitely secure a spot in your weekly dinner lineup!
How To Make Corey’s Teriyaki Chicken Bowl
The first thing you’ll want to do is cut your chicken thighs into pieces that are about 1 inch thick. If you don’t like chicken thighs, you can substitute for chicken breasts.
You’ll want your pieces to be pretty similar in size so that everything can cook evenly.
Next, you will combine all the sauce ingredients in a small bowl and set aside. Combining everything in advance makes the cooking process much quicker.
You can adjust the honey, soy sauce, and garlic powder to fit you and your family’s tastes buds. For example, if your family likes a sweet teriyaki sauce, you can feel free to add a little bit more honey.
While you are prepping your ingredients, you’ll want to be preheating your wok on medium heat. Preheating your wok allows you to get that famous “wok hei” flavor.

Once your wok is hot enough, add your oil and chicken. Lay your chicken into a nice, flat layer and let it cook until golden brown on the bottom. Flip and cook for an additional 2-3 minutes.
When your chicken is finished cooking, remove it and add your sauce. Cook until your sauce starts to bubble, and add the chicken back in. Lower the flame to low heat and cook for 2-3 additional minutes.
What can I serve with teriyaki chicken?
This dish is really suitable for you if you enjoy batch cooking/ meal prepping. Normally, I get tired of a dish if I have to eat it more than once, but that doesn’t happen when it comes to this recipe.
I like to pair this teriyaki chicken with some steamed rice and veggies, but you can also put this on top of a bed of noodles as well!
How long will leftovers last?
Leftovers can last 2-3 days when stored in an airtight container in the refrigerator. These leftovers make for a great lunch that you can bring to work the next day.
Corey’s Teriyaki Chicken Bowl
Ingredients
- 4 chicken thighs, skinned with the excess fat trimmed off
- 1 tbsp avocado oil
- 2 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp garlic powder
- salt and pepper to taste
- Steamed vegetables and rice for serving
Instructions
- Cut the chicken thighs into 1 inch cube sized pieces.
- In a small bowl, combine honey, soy sauce, garlic powder, salt and pepper. Set aside.
- Preheat the oil in a large wok on medium heat.
- Add chicken and cook until browned on the bottom, about 3-4 minutes.
- Flip the chicken and cook for an additional 2-3 minutes.
- Remove chicken from the wok. Add honey and soy mixture. Once it starts to bubble, add the chicken back in.
- Lower the flame to low heat and cook for an additional 1-2 minutes or until the internal temperature of the chicken reaches 165 degrees F.
- Remove from flame. Serve chicken with steamed veggies and rice.
